Cheesecake Bites from Katheryn F., Arizona (this recipe makes 24 bites)
24 vanilla wafers 3 pkgs. of 8 oz. cream cheese (room temperature) 1 cup of sugar 5 eggs 1 tsp. vanilla
Combine the above ingredients with mixer until mixed well. Place muffin liners in pans. Then, place a vanilla wafer in the bottom of a muffin tin. Fill each muffin tin 3/4 full. Bake at 325 degrees for 25 minutes. While baking prepare sour cream topping.
Combine topping together in a bowl with mixing spoon. Once the bites are baked for the 25 minutes, take out of oven and place sour cream topping on top of each muffin; then bake for an additional 5 minutes. Place on top of each bite 2 Comstock cherries. Refrigerate for 12 hours.

It’s been a “settling in” week as we unpacked, caught up on things, and enjoyed being back in the normal swing of things. We’ve had a few finishing projects that we needed to do in the house, and Joseph spent quite a bit of time Friday and Saturday installing two doors and finishing out door frames. Dad also needed to winterize the bus and prepare it for the imminent approach of winter.
This winter, we have several big projects, which include a music CD and another Moody book.
We are looking forward to the newlyweds arrival home this Tuesday!

From a recently e-mail: “I wanted to send this sweet picture of out oldest, Audrey, wearing her chore pack the first week and getting ready to unload the dishwasher. She RAVED about how she loved the chore pack because it reminded her of everything she needed to do in the morning instead of her forgetting things that needed to get done. We’ve loved the system so far! Thank you for creating it.”
